Had to go to 2 events in one day and brought this dish. Everyone loved it! I use Minute Brown Rice and very ripe yellow peaches (as opposed to the white). Many layers of flavor and wonderful textures results in people always asking me for the recipe.
I've made this recipe several times, always a big hit. Easy to do and easy to swap out ingredients, like mangos for the peaches and cashews (or peanuts) for the almonds.
