  • Heat oil in large deep skillet on medium heat. Add chicken; cook and stir 8 to 10 min. or until done.
  • Add spinach, rice, tomatoes and broth; mix well. Bring to boil; cover. Simmer on low heat 5 min., stirring occasionally.
  • Stir in cheese.

Substitute

Substitute 1/2 cup dry white wine for 1/2 cup of the broth. Please use alcohol responsibly.

Although I liked the ease of making this recipe, both my husband and I found it to be very bland. I used cooked seasoned chicken which I had in the frig but, otherwise, followed the recipe. We even added red pepper flakes to see if that would make a difference. It was better, but not great; we threw left overs away. Unfortunately, I would not recommend this recipe, and we will not make it again. However, this is only one of Kraft's many greats; so, keep 'em coming Kraft!

After reviewing the other users' comments, I tweaked the recipe a bit. 1) I marinated the chicken in Italian dressing, 2) Added onions, garlic and seasoning to the oil before adding the chicken, 3) Added olives for a little kick. I also replaced the instant rice with a box of Garlic/Herb risotto (just cook the risotto in separate pot for 15 minutes before going to step 2).

Everyone in my family loved this and that is rare, especially anthing containg spinach!! I added spices to my chicken before I cooked it such as garlic salt, pepper, thyme and a touch of celery salt. I also added green onions because I had some and wanted to use them up but the added onion flavor was good. I made this twice already and plan to make it again!

We seasoned up the chicken (we used Everglades if you've heard of it) while it was cooking and also added garlic powder and fresh ground pepper. Also freshly ground our parmesan instead of canned. Next time we'll add more tomatoes and spinach. Definitely will make again!!!

Rated 4 out of 5 by from This was very tasty! This was very tasty! My husband and I liked that it was so healthy and didn't have any "heavy" sauces in it. I cut everything in half ( recipe makes 4 servings ), but next time will add more spinach and tomatoes- both really add a lot of flavor to the dish! Also added a bit of seasoning salt while it was cooking.

I used canned Italian tomatoes and seared the chicken in dressing. Although my family said it was good, it just wasn't a big hit. I'd probably make it again if I had the ingredients and nothing else was available.

Rated 5 out of 5 by from This was an excellent dish. This was an excellent dish. Very fast and easy. I cooked my rice before putting it in the skillet. It always turns out better like that for me. Also, I added some garlic cloves, and used white wine since I had no broth on hand. It turned out just great! Everyone else loved it too!!

Rated 4 out of 5 by from Very easy and tastes great too! Very easy and tastes great too! I used grape tomatoes and will probably use 2 cups of them next time. I also used chicken that was marinated with italian seasonings/dressing. I also sauteed onion and garlic in the oil before cooking the chicken. This is a winner in my house.
