RITZ Mock Apple Pie

No time to peel apples? Fake it like a pro with this surprising combo of Ritz Crackers, lemon and cinnamon. Truly as easy as pie.

What You Need

cups sugar

tsp. cream of tartar

1-3/4

cups water

Zest and 2 Tbsp. juice from 1 lemon

pkg. (14.1 oz.) ready-to-use refrigerated pie crust (2 crusts)

RITZ Crackers, coarsely broken (about 1-3/4 cups)

Tbsp. butter or margarine, cut into small pieces

1/2

tsp. ground cinnamon

Make It

MIX sugar and cream of tartar in medium saucepan. Gradually stir in water. Bring to boil on high heat; simmer on low heat 5 min. or until mixture is reduced to 1-1/2 cups. Stir in zest and juice; cool 30 min.

HEAT oven to 425°F. Roll out 1 crust on lightly floured surface to 11-inch circle; place in 9-inch pie plate. Place cracker crumbs in crust. Pour sugar syrup over crumbs; top with butter and cinnamon.

ROLL out remaining crust to 10-inch circle; place over pie. Seal and flute edge. Cut several slits in top crust to permit steam to escape.

BAKE 30 to 35 min. or until golden brown. Cool.

Chocolate-Walnut Mock Apple Pie

Prepare as directed, sprinkling 1/2 cup each chopped PLANTERS Walnuts and BAKERS Semi-Sweet Chocolate Chunks over cracker crumbs before covering with sugar syrup.

Substitute

Prepare using pastry for 2-crust 9-inch pie. Divide pastry in half; continue as directed.

This is so easy and has wonderful results. If you don't have apples on hand was a relief to be able to pull this out and make.

Ah, so happy to see this recipe again. I remember in the late 50's my older sister brought this recipe home from Home Ec. class and we made it so often and loved it. I will be making this soon on my trip down memory lane. Thank you for giving us some of the old classics!

I also have made this pie as my mother gave me the recipe 50 years ago. Love it especially when there are no apples available. Thanks for showing it again

My grandma use to make this pie all the time, I was excited when I saw this recipe in the listing. It does taste like a real apple pie.

Seen this recipe and thought no way! So I tried it. It really tastes like apple pie. My kids really like. Kinda of reminds me of an recipe my friend got from her mother. It's called green tomatoe pie. She told me that it tasted like apple pie and it did.

I love this pie. I am 62 and I still remember my sister making this back in the 50s. This recipe was a big hit back then. When people had a front porch and shared pies and treats with their neighbors. Thanks for the memories.

WITH A FEW VARIATIONS. I had to toss the pie and I was one disappointed mock apple pie eater! There must have been a mistake in the amount of sugar and water to utilize. NEXT TIME (which will be soon), I will use 3/4 of a cup of sugar not 1-3/4 cups. (Entirely, entirely too sweet.) I also will use 50 crackers and 3/4 of a cup of water. I did sprinkle cinnamon on the crackers and toss them afterward inasmuch cinnamon is a main ingredient in an apple pie. YOU HAVE NO IDEA HOW MUCH HATED TOSSING THAT PIE. I had not enjoyed a mock apple pie in years and was looking forward to it so much.

I was very surprised at the result thinking it wouldn't taste anything like an apple pie...but I was wrong! My son brought the recipe home for me to try and we made it together at his last visit.
