  • Heat oven to 325°F.
  • Beat whipping cream with mixer on high speed until soft peaks form. Mix steak sauce, onions and horseradish in medium bowl. Add whipped cream; stir gently until well blended. Cover. Refrigerate until ready to use.
  • Place meat in roasting pan.
  • Bake 45 min. to 1 hour 15 min. or until done (160°F). Cut meat into thin slices. Serve with horseradish sauce.

Let roast stand, covered loosely with foil, at room temperature 10 to 15 min. after removing from oven to retain the meat juices and make carving easier.

Fabulous sauce, depending on your heat threshold you may want to add more horseradish...my family loves it, so we 'kicked it up a notch' (to quote Emeril). But really a good flavorful addition to the roast, and I added Jazzy Mashed Potatoes (see website for recipe) for a good old fashioned meat and potatoes with a little zest! Definitely will make again!!

My husband really enjoyed the sauce - he said his taste buds didn't know what to think because it was so different then anything he's ever had! If you don't like horseradish, though, this sauce will not make you change your mind. It's worth a shot though.
