Roast Chicken Poupon

Roast chicken is easy and delicious when you brush it with this mixture of GREY POUPON and Italian seasoning and let it cook to perfection.

What You Need

cup  GREY POUPON Dijon Mustard
cup  butter, softened
tsp.  Italian seasoning
 roasting chicken (5 lb.)
cup  water
Tbsp.  flour
cup  fat-free reduced-sodium chicken broth

Make It

HEAT oven to 375°F .

MIX mustard, butter and seasoning; reserve 2 Tbsp. for gravy. Brush chicken with half of the remaining mustard mixture; reserve remainder for basting. Place chicken on rack in roasting pan; add water to bottom of pan.

ROAST chicken 1-3/4 to 2 hours or until chicken is done (165°F), basting every 30 min. with remaining mustard mixture and covering with foil after 1 hour. Remove chicken to platter; keep warm.

POUR pan drippings into large measuring cup; remove excess fat.

COMBINE reserved mustard mixture and flour in roasting pan. Cook on medium heat 1 min., stirring constantly. Add pan drippings and broth; bring to boil. Cook 2 to 3 min. or until thickened, stirring constantly. Serve chicken with gravy.

How to Check Chicken For Doneness
Always use a thermometer to see if chicken is cooked through. The internal temperature should register at least 165ºF. When the chicken is completely cooked, the juices should run clear.
