What You Need

large red pears, finely chopped
1/2
cup coarsely chopped PLANTERS Walnuts, toasted
1/2
tsp. crushed red pepper flakes
1/2
cup chopped fresh parsley, divided
2/3
cup KRAFT Balsamic Vinaigrette Dressing, divided
1-1/4
tsp. ground cumin, divided
4
cloves garlic, finely chopped
1
 center-cut pork loin roast (4 lb.)

Make It

HEAT oven to 425ºF.

COMBINE pears, nuts, crushed red pepper, 1/4 cup parsley,1/3 cup dressing and 1/4 tsp. cumin. Reserve half the pear salsa; refrigerate to use the next day.

MIX remaining parsley, dressing, cumin and garlic. Place meat in roasting pan or shallow baking dish; brush with dressing mixture.

BAKE 10 min. Reduce oven temperature to 325ºF. Bake 1 hr. or until meat is done (160ºF). Let stand 10 min. Slice half the meat; serve with remaining pear salsa. Cool remaining meat, then shred and refrigerate to use the next day.

Pears will continue to ripen after they have been picked. Leave them on the counter until they are ripe. If they ripen before you are ready to use them, store them in the refrigerator until ready to use.
Substitute
Prepare using any other variety of fresh pears.
Pork Tostadas with Pear Salsa
Mash 2 drained cans (15.5 oz. each) black beans in large bowl. Add 1/4 cup KRAFT Real Mayo Mayonnaise, 2 chopped garlic cloves and 2 finely chopped green onions; mix well. Spread 2 Tbsp. bean mixture onto each of 8 tostada shells; top each with 1/4 cup shredded cooked pork and 3 Tbsp. pear salsa. Serve immediately. Makes 8 servings.
