Great recipe - though, I did make modifications based on what I had on hand. I used tilapia for the fish. I used a can of Italian stye diced tomatoes instead of the cherry tomatoes, which I added to the bean mixture along with spinach and then added all of that to the rice and simmered while the fish was baking. It was very tasty!
