Serve with assorted cut-up fresh vegetables.
Serve dip in a hollowed-out bread loaf. Simply cut thin slice off top of 1-lb. round bread loaf. Remove center of loaf, leaving 1-inch-thick shell. Tear removed bread into bite-size pieces to serve with the dip or reserve for another use. Fill bread shell with dip just before serving.
Substitute 1 tomato, seeded and chopped, for the peppers.

I took this dip to a party and came home with most of it. It's not any better than the store-bought dips. It is costly to make. Nothing special...I would not make again. I don't understand all the rave reviews.
I made this to take for xmas eve and xmas and it was a big hit again.I drained and pureed the peppers in food processor and added to rest of ingredients, because it gives it more of the roasted pepper taste, than just chopping the peppers.
I have made this dip several times and every single time at least 2 or 3 people have asked me for the recipe. I serve it with homemade bread.
