Will never go back to white potato salad! Served this dish at a large Halloween party & everyone loved it. Used toasted pecans instead of walnuts, and added dried cranberries. It tasted fantastic and is much healthier than white potatoes.
I didn't care for the texture of this dish, and something seemed off to me with the flavors. However, my husband like it OK.
If I made this again, I think I would steam the potato, and use Balsamic Vinegar dressing instead of Italian.
