  • Heat oven to 400ºF.
  • Combine potatoes and pineapple in large bowl. Mix remaining ingredients until blended. Add to potato mixture; mix lightly.
  • Spread onto rimmed baking sheet sprayed with cooking spray.
  • Bake 45 to 50 min. or until potatoes and pineapple are tender and golden brown, turning after 30 min.

Special Extra

For more flavor, add 1/4 tsp. ground red pepper (cayenne) to dressing mixture before tossing with the potato mixture.

Rated 4 out of 5 by from Weird combination but it works I found the cook time on this to be a little long. It's more like 40 min total. I wish I had read the extra tip about adding cayenne as that would have been a nice addition. I cut the brown sugar in half and frankly, would probably leave it out altogether next time. The pineapple I had was extremely sweet. I also might trade out the butter four olive oil.
