I love this recipe - I like that you can substitute any veg. that you like. I've made this several times, using fresh mushrooms, carrots, vidalia/sweet onions, and any combination of red, green, or yellow pepper. I also melt the cheese in the oven for 5 minutes instead of broiling. Using a Pampered Chef food chopper make this recipe super easy and quick!
