Substitute 6 split sandwich rolls for the tortillas. Place bottom halves of rolls, cut sides up, on baking sheet; top with roasted vegetables and cheese. Broil as directed. Cover with tops of rolls.

I love this recipe - I like that you can substitute any veg. that you like. I've made this several times, using fresh mushrooms, carrots, vidalia/sweet onions, and any combination of red, green, or yellow pepper. I also melt the cheese in the oven for 5 minutes instead of broiling. Using a Pampered Chef food chopper make this recipe super easy and quick!
I may have cooked the veggies too long. I don't know. I would only make it again if I were on a special diet and needed better vegetable intake.
