  • Heat oven to 425°F.
  • Whisk dressing mix, vinegar and oil until blended. Pour over vegetables in large bowl; toss to evenly coat. Spread onto bottom of rimmed baking sheet.
  • Bake 20 min. or until vegetables are tender, stirring occasionally.
  • Heat broiler. Place tortillas in single layer on baking sheet; top with roasted vegetables and cheese.
  • Broil 2 min. or until cheese is melted. Roll up.

Variation

Substitute 6 split sandwich rolls for the tortillas. Place bottom halves of rolls, cut sides up, on baking sheet; top with roasted vegetables and cheese. Broil as directed. Cover with tops of rolls.

I've made this several times, using fresh mushrooms, carrots, vidalia/sweet onions, and any combination of red, green, or yellow pepper. I also melt the cheese in the oven for 5 minutes instead of broiling. Using a Pampered Chef food chopper make this recipe super easy and quick!

My husband, who is a big meat-eater, didn't even miss the meat in this meal. I added lots of chopped garlic and used a bit of feta cheese for more flavor. Great!

I did have to cook this quite a bit longer to get the carrots soft enough for my husband and to get the chicken done.
