  • Heat oven to 400ºF.
  • Make 2 or 3 small cuts in each short end of red pepper; press pepper to flatten. Spread red pepper and remaining vegetables into single layer on baking sheet sprayed with cooking spray. Sprinkle with black pepper.
  • Bake 5 to 6 min. or until crisp-tender.
  • Spread cut sides of focaccia with cream cheese spread; fill with vegetables.

Special Extra

Add fresh arugula leaves to sandwich filling.

Variation

Use heated grill pan to cook vegetables, brushing vegetables with 1 Tbsp. olive oil before grilling until crisp-tender.
