What You Need

1/2
 red pepper
1
slice  red onion (1/4 inch thick)
2
slices  each yellow squash and zucchini (1/4 inch thick)
1/8
tsp.  black pepper
1
square  focaccia bread (3 inch), cut horizontally in half

Tbsp.  PHILADELPHIA Spinach & Artichoke Cream Cheese Spread

Make It

HEAT oven to 400ºF.

MAKE 2 or 3 small cuts in each short end of red pepper; press pepper to flatten. Spread red pepper and remaining vegetables into single layer on baking sheet sprayed with cooking spray. Sprinkle with black pepper.

BAKE 5 to 6 min. or until crisp-tender.

SPREAD cut sides of focaccia with cream cheese spread; fill with vegetables.

Special Extra
Add fresh arugula leaves to sandwich filling.
Variation
Use heated grill pan to cook vegetables, brushing vegetables with 1 Tbsp. olive oil before grilling until crisp-tender.
