I'm extremely carb-sensitive, and my husband feels a lot better when he cuts carbs to a minimum, too. So I used the KRAFT CARB WELL Ranch Dressing and mixed it with a zero-carb bbq sauce. For two servings I used half a bag of greens, subbed 3 grape tomatoes halved for the tomato, halved all the other ingredients except the chicken -- I used just under a pound of cooked chicken breasts. It was terrific!

Hubby and I wanted a light dinner tonight so I made this and served it with fresh baguette bread. For the 2 of us I used about 7 oz. of salad greens. I divided the rest of the original recipe in half. Next time I would also add more tomato, celery, onion, and chicken. Also, I would use a stronger cheese, such as Monterey Jack or pepper Jack (the mozzarella got lost). This was VERY GOOD

When I told my husband that I needed barbeque sauce for the salad, he had a weird look on his face. I didn't think he was going to like it, but he ended up loving it. So did my 5 year old daughter. It was pretty filling too.
