  • Beat egg whites and cream of tartar in large bowl with electric mixer on high speed until blended.
  • Add powdered sugar gradually, beating on low speed until well blended after each addition. Beat on high speed 5 min. or until stiff peaks form.

Note

Prepared icing must be kept covered at all times to prevent hardening.

Make it Easy

Icing can be prepared ahead of time. Prepare as directed, then place in medium bowl; place plastic wrap directly on surface of icing. Refrigerate several hours or overnight. Beat with electric mixer on high speed until stiff peaks form just before using.

This recipe is frustrating, I spend alot of time working on cookies (w/this icing) and then once I'm done, the cookies are all gone!! Just goes to show you, This is a really good icing recipe!! My family loves it! The icing drys quickly so you can stack the cookies when you're done! Everyone should have this recipe in their box!

Rated 1 out of 5 by from i made this icing for mothers day, & it turned out to be a diaster. i made this icing for mothers day, & it turned out to be a diaster. the icing was hard as a brick i couldn't even cut the cake. i felt bad for mom & decided to make her another cake using half the tartar. i found another royal icing recipe from a good cake book & it has been very successful.

That never happened. It tasted great though. I don't know what I did wrong, but it must have been something. :(
