not a fan of catalina......i used chicken broth instead, made it for 2 people (kinda halved recipe). 1 cup minute rice, 1 cup broth, micro 6 minutes, stand 5, fluff. then added a bit more broth, corn/peas (warmed them first), bacon, gr onions. added some mushrooms too. needs a bit more flavor/spice, but i'll continue working with it. might cook rice with split of broth and butter next time.
KInd of confusing - make it hot or cold? Anyway, I made it with warm rice and it was very good. I did not add all of the salad dressing, didn't need it. Also, reduced the amount of corn - family not corn fans. Wondering if it will be even better chilled.
