  • Heat oven to 400ºF.
  • Spread bread onto baking sheet; drizzle with oil. Sprinkle with 1 Tbsp. cheese and crushed pepper. Bake 10 min.
  • Meanwhile, cook and stir bacon in large saucepan on medium heat until crisp. Remove bacon from pan with slotted spoon; drain on paper towels. Discard all but 1 Tbsp. bacon drippings from pan. Add onions to pan; cook and stir 5 min. or until crisp-tender. Return bacon to pan along with the beans, tomatoes, broth and 1/4 cup of the remaining cheese; stir. Simmer on medium-low heat 20 min., stirring occasionally. Add kale; cook 10 min.
  • Serve soup topped with croutons and remaining cheese.

Storage Know-How

Cool any leftover soup, then pour into freezer container. Freeze up to 2 months. Thaw in refrigerator overnight before reheating to serve as directed.

Rated 3 out of 5 by from I am not a kale fan - loathe it actually. I am not a kale fan - loathe it actually. However, reading through this I can make 1 simple change that will make it one of my faves: substitute spinach for the kale. I am excited to try this recipe with this simple substitution. And, thanks to the reviewer who commented about subbing in ready made croutons. My local bakery makes their own and they are delicious - I buy them to toss in soup &^ salads all the time. For a time saver, I think I will keep you suggestion in mind.

I skip the 1st four ingredients and just buy croutons! Whole family loves this--I double batch it and it's normally gone within 2 days. I did freeze last time-DID NOT taste as well fresh!

Rated 5 out of 5 by from I love this recipe. I love this recipe. I've only had kale in smoothies and salads until I came across this recipe. It's simple and quick. I used Hunts roasted garlic diced tomatoes and fire roasted diced tomatoes. I kept the rest of the recipe the same.
