  • Combine first 5 ingredients.
  • Toss chicken with dressing. Mix cream cheese spread and salsa until blended; spread onto tortillas. Top with lettuce, tomatoes, chicken mixture and half the pineapple mixture; roll up, tucking in both sides of each tortilla as it is rolled. Secure with toothpicks; cut in half.
  • Serve with remaining pineapple mixture.

Purchase peeled and cored fresh pineapple, found in the produce section of most larger supermarkets, to make the pineapple pico de gallo. And to shorten the prep time even more, use a purchased rotisserie chicken for the shredded cooked chicken.

Rated 3 out of 5 by from This was a good recipe for lunch time. This was a good recipe for lunch time. I made it for dinner and I think that was my mistake. I was not a big fan of the cream cheese/salsa mixture, but I really loved the pineapple pico de gallo. Also, the pineapple pico de gallo juice leaked a lot, so it made my tortilla somewhat soggy, so next time I'll be wary of draining the juice before adding on the wrap!
