  • Beat Neufchatel in small bowl with mixer until creamy. Gradually add salsa, beating after each addition until well blended. Stir in shrimp and vegetables until well blended.
  • Refrigerate 1 hour.
  • Serve with crackers.

Rated 4 out of 5 by from The nice thing about this recipe is that it's so easy. The nice thing about this recipe is that it's so easy. But it is more of a salsa than a creamy dip if made according to the recipe. Since I wanted something creamier I just made it with a full block of cream cheese and half a jar of salsa a little extra shrimp. It was a pretty shade of orange!

My family loved it when I bought it over for my nieces sweet sixteen last week. My wife and I made 3 bowls and it was gone in less than an hour. Of course I told everyone where I got it from. Just didn't write it all down for them. HA-HA.

I had a bag of frozen shrimp (tails-on) in the freezer, so I used those - thawed, removed the tails and cut the shrimp in half - for this recipe. Since the shrimp were large, I purchased the large-size wheat-thins to serve the dip with. Everyone enjoyed this dip to the bottom of the bowl.

I can be a little to runny and I wonder what could be added to thicken it up. It still had a good taste and will make again. Also I do wonder what it would be like warmed up! Other than that love the shrimp in it!!!

But i did use a the whole 8 oz of cheese and made it the day before, i think that helped let all the ingredients set in. I would make this again, and have already been asked from others for this recipe!!

Also, I substituted bell pepper for the celery, just because I like it better. Deelish! Wish I had some more, right this second :p

Rated 4 out of 5 by from I made this using a full 8-oz. I made this using a full 8-oz. pkg of Neufchatel Cheese and two 6 oz. cans of tiny shrimp. When I served it about 3 hrs. after making it, it was rather thin. When I served the left over dip 4 days later, it was much better. I'll definitely make it again.
