  • Heat dressing in large saucepot on medium-high heat. Add chicken; cook 5 min. on each side or until lightly browned on both sides, adding onion and garlic after 5 min.
  • Stir in water, peppers, cilantro and oregano. Bring to boil on medium-high heat. Reduce heat to low; simmer 1 hour, occasionally skimming grease from surface.
  • Add potatoes to saucepot; cook 15 min. or until potatoes are tender. Serve in bowls with hot cooked rice, if desired.
