  • Heat oven to 375ºF.
  • Mix cream cheese spread, taco seasoning and milk until blended. Combine next 4 ingredients in large bowl. Add half the cream cheese mixture; mix lightly.
  • Spread 1/3 of the chicken mixture onto bottom of 9-inch pie plate; top with 1 tortilla, half the remaining chicken mixture and 1/4 cup shredded cheese. Cover with second tortilla, remaining chicken mixture, 1/4 cup shredded cheese and remaining tortilla. Top with remaining cream cheese mixture and shredded cheese; cover.
  • Bake 25 min. or until heated through, uncovering for the last 5 min.

Serving Suggestion

Serve with a crisp mixed green salad to round out the meal.

Special Extra

Garnish with 1/4 cup chopped fresh cilantro just before serving.

Note

Purchase a rotisserie chicken to get the shredded chicken needed to prepare this delicious casserole. Refrigerate remaining chicken for another use.

Rated 5 out of 5 by from This was delicious! This was delicious! I did change the recipe a little. I used canned chicken to save time and my husband didn't notice. I also used Rotel instead of the diced tomatoes. I ended up using way more cheese than they suggested. I did need to cook it longer for the cheese to be melted. I did notice that the inside tortillas weren't as cooked, but I think it was fine. I can't believe how many of the reviews substituted the black beans. They really make this dish and are so good for you! My husband is happy to take the leftovers to work and I will definitely make this one again!

I used pinto beans instead of black beans and use regular cream cheese (could not find the cooking cream) Just addes more seasoning like chili powder to make up for it. I also added cilantro, salt, pepper and garlic. Was very easy to make and is even better the 2nd day when all of the flavors have blended together. Topped with Salsa, sour cream and avacados and wow! Great flavors!

Rated 5 out of 5 by from My husband and I liked this recipe very much. My husband and I liked this recipe very much. When he says we should have this again, I know it is good. The tomatoes I bought were diced with green chili's and used red beans, my husband prefers, instead of black beans. I also served it with a medium salsa. I couldn't get the Sante Fe Blend anywhere in our area but used the garlic and added taco seasoning, cumin and chili powder to it.

Rated 5 out of 5 by from This recipe was awesome! This recipe was awesome! I made some substitutions though since my town is very small and doesn't sell much variety here. I boiled the chicken with onion, fresh garlic and cumin then instead of just tomatoes I used Rotel. I couldn't find the Santa Fe Cooking Creme so I just used the Original Cooking Creme. After everything was cooked I added black olives to the top of casserole.

I waited until the tell tale signs of bubbling around the edges to know a casserole is cooked throughly - nearly doubling the cooking time stated in the recipe. I could see many of your favorite ingredients working in this.

I really loved this recipe, the only thing is that i added other ingredients to give it more flavor. on the black beans i added some tomatoes,onions,cilantro some mild sauce and some lemon.i also added a little sourcream to the santa fe cream to make it more creamier..everyone loved it :)

No Santa Fe creme in 2 stores so I used 1 fat free cream cheese + ~1/4c sour cream + ~2T tortilla soup mix. I also used 10" tortillas and glad I did. Good taste overall but I wish I'd put more cream mix inside rather than on top- it was a bit too much on top.

I made this recipe using canned chicken, which may have been some of the reduction in quality. It kind of ended up mushy combining the canned tomatoes and cooking creme... just didn't really like the texture. I would say going the route of just cooking the creme and chicken and beans and making a wrap with that and some fresh tomatoes and cheese added at the end. Otherwise the moisture really just makes the tortillas soggy.
