Rated 4 out of 5 by from Very quick to make and tasted great as well. Very quick to make and tasted great as well. The recipe made quite a bit for my family of three so we had a lot left over. So, I made the "enchiladas" out of the left overs by combining the chicken and veggies with the rice and rolling the mixture up in tortilla shells. I poured enchilada sauce over the top and sprinkled some sharp cheddar cheese. I baked them at 350 degrees for about 45 minutes. They were great! Almost better the second time around!

We added hot sauce and sour cream to ours, which made it even better. I think that it would be good as a wrap, maybe we'll try that next time. This recipe is very, very easy to prepare. It is a good recipe to make if you don't have much time to make supper. Everyone should try this recipe. I'll make it again and again.

I used some left over chicken breasts that my husband grilled and used pinto beans instead of black beans. I also served it over brown rice. WOW! I am making this again, and again.

Rated 5 out of 5 by from My family loved this! My family loved this! I seasoned and sliced chicken breasts and cooked them first. Then added in the other ingredients as instructed. (Didn't have green onion, used a yellow cooking onion instead.) Served with rice and a spinach salad. Yuummmmmmy!!!
