I made a double recipe for a fellowship meal after church. To be honest, I was a little concerned because it didn't spell appetizing while cooking. However, it was a big hit and folks raved about how good it was. The only thing I would do differently is at the end I would top it off with crumbled tortilla chips and shredded cheese. Great recipe and will definitely cook it again.
My way 5 stars I don't use any of the bell pepper family. There are so many GREAT PEPPER out there I'll start with a mild, Cubanelle, Hatch, Ortega, Anaheim, Poblano, Jalapeno, Serrano and so on. Don't forget to rinse the can BEANS =^..^=
