  • Heat oven to 400ºF.
  • Cook crumbles, corn and salsa in large nonstick skillet on medium heat 5 min. or until heated through, stirring frequently. Remove from heat. Stir in rice, cheese and cilantro.
  • Pour water into 8-inch square baking dish. Spoon crumbles mixture into pepper halves; place in dish. Cover.
  • Bake 30 min. or until peppers are crisp-tender and filling is heated through (160ºF).

Rated 3 out of 5 by from I absolutely loved this recipe. I absolutely loved this recipe. I made it with ground beef and put colby/jack cheese on it . I also put salt, pepper, salsa, sour cream, and olives on it and topped it with fresh cilantro and served it with black olives for my kids. My husband on the other hand did not love it and because of that I will probably not make this again. My kids ate some but did not love it.

I tripled the recipe to make more of the stuffing mix. I would make this again but only for adults. It's not a kid friendly recipe. I would make the stuffing again but use something else other than green peppers if making it for kids. I also served a side salad to round off the meal.

The kids loved the stuffing and not so much the peppers so I took the stuffing out of the peppers and put it in browned flour Tortillias for them.....They Loved it!!! I served Chips, Salsa, Cheese Dip and Beans with this dish!

Rated 4 out of 5 by from I have made this several times. I have made this several times. Such an easy dish and a really good company dish. I've used ground turkey and I've done it with ground pork, delicious either way. I love using red peppers instead of the green.
