  • Whisk eggs, milk and butter in medium bowl until blended. Add flour; beat until smooth. Let stand 10 min.
  • Spray heavy 8-inch skillet with cooking spray; heat on medium heat. Ladle 1/4 cup batter into skillet; cook 1 to 2 min. on each side or until crêpe is lightly browned on both sides. Remove crêpe from skillet; cover to keep warm. Repeat with remaining batter to make 7 additional crêpes.
  • Bring 1 cup water to boil in large saucepan. Remove from heat. Add dry gelatin mix; stir 2 min. until completely dissolved. Mix cornstarch and remaining water until blended. Add to gelatin; mix well. Return to heat. Bring to boil, stirring constantly. Add blueberries; stir. Cook 3 to 5 min. or until heated through, stirring occasionally. Remove from heat.
  • Fold each crêpe in half, then fold in half again to form triangle. To serve, top each crêpe with about 1/3 cup of the warm gelatin mixture and 1 Tbsp. COOL WHIP.

Make Ahead

The crêpes can be cooked ahead of time; cool completely. Stack on waxed paper-covered plate, layering additional sheets of waxed paper between crêpes. Wrap tightly with plastic wrap; refrigerate up to 5 days before using as directed.
