  • Heat oil in large nonstick skillet on medium-high heat. Add chops; cook 5 min. on each side or until browned on both sides.
  • Drain peaches, reserving juice. Mix juice with dressings and mustard until blended. Add peaches and dressing mixture to skillet; simmer on medium-low heat 3 min. or until chops are done (145°F), and sauce is hot and bubbly. Remove from heat. Let stand 3 min.
  • Serve chops over rice; top with sauce.
