  • Cook chicken in nonstick skillet on medium-high heat 4 min. on each side or until browned on both sides.
  • Add salsa and beans. Bring to boil; cover. Simmer on medium-low heat 5 min. or until chicken is done (165ºF).
  • Top with cheese. Remove from heat. Let stand, covered, 5 min. or until cheese is melted.

Rated 5 out of 5 by from Go-to Quick Supper I make this at least once every two weeks. I'm a bit more generous with the salsa and cheese since I'm feeding more that four. I also slice or cube the chicken. I use about 3/4 of a large jar of salsa. I add the remaining salsa to rice. The chicken is served over the rice with a little (or a lot) of sour cream. Recently, my hubby was told to cut out the rice. I made this dish and served it over Quinoa with the salsa added in. It was great, but my family is new to quinoa, so it will take some getting accustomed to. Everyone in the house gets excited when I say we're having Mexican Chicken for supper.

When browning the chicken, I did add a little seasoned salt, pepper, a dash or two of taco seasoning and some minced onion. My end result didn't look nearly as pretty as the picture on the recipe but it tasted awesome! My boyfriend said it looked like a dish you would expect to see at a mexican restaurant. Can't wait to make it again!

I cut the chicken into strips and sprinkled it with the new flavor of Mrs. Dash-Fiesta Lime. Then I sliced up some green pepper, onions and added a can of mushrooms and sauted them all with more of the Mrs. Dash. Then I mixed all the ingredients together and served it up on tortillas. My family loved it!

Omitted the beans, cause he doesnt like them. Served over rice. It was SOOOO good- he wanted to eat mine I saved for lunch the next day! No way! We both licked our plates! Will make again, especially since it was so simlple.

Made as instructed, but added 1 cup of corn, as other reviewers suggested, really enjoyed the texture it brought to the dish. Next time I will season the chicken with salt, pepper and taco seasoning, also as other reviewers suggested. Served with a side of rice. Perfect meal! Thank you

I made a few changes, but this was awesome...dredged the chicken in taco seasoning before browning in a bit of olive oil. Added garlic and a can of rinsed corn, also rinsed the black beans. Served with brown rice. Yummy!!!

I added a bit of evoo to brown the chic & minced garlic and cilantro right before I added the salsa & black beans. Served it with toasted garlic tortilla shells & jasmine rice...and squeezed fresh lime juice over it all when it was plated. Even forgetting to add the cheese at the end still couldn't keep this from being Delish! Thanks!!

I seasoned the chicken breast with taco seasoning and also added about a 1/2 teaspoon to the sauce. I also added about 1/2 cup frozen corn to the source will it simmered. I also used only half the cheese as my family doesn't like a lot of cheese.
