  • Cook chicken in nonstick skillet on medium-high heat 4 min. on each side or until browned on both sides.
  • Add salsa and beans. Bring to boil; cover. Simmer on medium-low heat 5 min. or until chicken is done (165ºF).
  • Top with cheese. Remove from heat. Let stand, covered, 5 min. or until cheese is melted.

When browning the chicken, I did add a little seasoned salt, pepper, a dash or two of taco seasoning and some minced onion. My end result didn't look nearly as pretty as the picture on the recipe but it tasted awesome! My boyfriend said it looked like a dish you would expect to see at a mexican restaurant. Can't wait to make it again!

Rated 5 out of 5 by from This recipe is so good and easy to make! This recipe is so good and easy to make! I changed it up a little though. I cut the chicken into strips and sprinkled it with the new flavor of Mrs. Dash-Fiesta Lime. Then I sliced up some green pepper, onions and added a can of mushrooms and sauted them all with more of the Mrs. Dash. Then I mixed all the ingredients together and served it up on tortillas. My family loved it!

I added a bit of evoo to brown the chic & minced garlic and cilantro right before I added the salsa & black beans. Served it with toasted garlic tortilla shells & jasmine rice...and squeezed fresh lime juice over it all when it was plated. Even forgetting to add the cheese at the end still couldn't keep this from being Delish! Thanks!!

Rated 5 out of 5 by from This was good. This was good. By itself it would just be okay. I followed the advice of others. Added onion pepper a bit of tomato. Omitted the beans, cause he doesnt like them. Served over rice. It was SOOOO good- he wanted to eat mine I saved for lunch the next day! No way! We both licked our plates! Will make again, especially since it was so simlple.

Made as instructed, but added 1 cup of corn, as other reviewers suggested, really enjoyed the texture it brought to the dish. Next time I will season the chicken with salt, pepper and taco seasoning, also as other reviewers suggested. Served with a side of rice. Perfect meal! Thank you

I seasoned the chicken breast with taco seasoning and also added about a 1/2 teaspoon to the sauce. I also added about 1/2 cup frozen corn to the source will it simmered. I also used only half the cheese as my family doesn't like a lot of cheese.

Rated 5 out of 5 by from Wow! Wow! That's all I can say. This dish was super simple to make. I was afraid I'd burn the salsa so I added 1/2 a 10oz can of tomato soup. I added colby cheese too. It was amazing. Great less than 30 meal with only 4 ingredients. Wonderful dish for a Monday night! Will make again and again.

I used the Red Gold tomatoes with the hot chilies, half the salsa called for, and 1/3 c. instant brown rice while the dish simmered. What's great about this dish you can make it mild or hot depending on the tomatoes and salsa.
