  • Blend first 3 ingredients in blender until smooth.
  • Heat 1 Tbsp. oil in large skillet on medium heat. Add garlic and onions; cook 5 min. or until tender. Remove from skillet. Heat remaining oil in skillet on medium-high heat. Add shrimp, in 2 batches; cook and stir 3 min. or until pink. Remove from skillet; cover to keep warm. Return garlic, onions and shrimp to skillet; stir in sauce mixture. Bring to boil; simmer on low heat 3 min. or until heated through.
  • Spoon over rice; serve topped with onions and sour cream.

Special Extra

Add more arbol chiles if you want to make the sauce spicier.

Omit rice and serve as an appetizer. Make 16 appetizer servings.

Since I couldn't find arbol chiles or uncooked shrimp I used dried cayenne pepper and cooked cocktail shrimp and it was perfect. I can't think of a single thing I would do differently. My boyfriend and I both LOVED it and it meant a lot to me because he is extremely picky.

What type of chile pepper could I replace with the Arbol Arbol chile are very hot, and related to cayenne pepper. Be careful during preparation. Arbol chiles are also the ones that are dried

I didn't have the arbol chiles and didn't want to run to the store just to get one so I used cayenne pepper instead. Internet says arbol/cayenne are equivelent in heat. I cut the recipe down for one and it still was very good and spicy.
