Substitute 2 cups roasted red pepper strips for the fresh peppers.
Omit red pepper and 1/2 cup cooking water. Increase sausage to 1 lb. Add 1 undrained 14-1/2-oz. can diced tomatoes with the peppers. Continue as directed.

This recipe is very easy to make and tastes really good.
My family really enjoyed this. I used a different dressing and just used red peppers, I topped it off with Parmesan cheese, yum!
