  • Heat oven to 350ºF.
  • Remove and discard casings from sausage if necessary; crumble sausage into large skillet sprayed with cooking spray. Cook 10 min. or until evenly browned, stirring occasionally.
  • Spoon half the sausage into medium bowl; reserve for later use. Add peppers, onions and carrots to remaining sausage in skillet; cook 5 min. or until vegetables are crisp-tender, stirring occasionally. Add pasta sauce, 1/2 cup water and beans; mix well. Bring to boil, stirring occasionally. Remove from heat.
  • Place chicken breasts, smooth sides down, on work surface. Add dry stuffing mix and remaining water to reserved sausage; mix well. Spoon onto centers of chicken breasts, adding about 1/2 cup stuffing to each. Roll up, starting at one short end of each breast. Secure with wooden toothpicks.
  • Spread half the pasta sauce mixture onto bottom of 8-inch square baking dish sprayed with cooking spray; top with chicken roll-ups, seam sides down. Cover with remaining pasta sauce mixture. Sprinkle with cheese; cover.
  • Bake 45 min. or until done (165ºF), uncovering for the last 10 min. Remove and discard toothpicks before serving.

How to Pound Meat

To pound chicken breasts, veal cutlets or tenderize beef, place meat in a freezer-weight resealable plastic bag, then pound the meat with the side of a heavy can, rolling pin or meat mallet until meat is the desired thickness. The bag will contain the liquids from the meat, minimizing the mess.
