  • Heat oil in large skillet on medium-high heat. Add mushrooms and garlic; cook and stir 3 to 5 min. or until mushrooms are tender.
  • Add spinach; cook and stir on medium heat 4 to 5 min. or just until spinach is wilted.
  • Stir in pepper; sprinkle with cheese.

Cooking Know-How

Spinach can be added in batches if your skillet does not accommodate all of the spinach at once. As soon as the spinach begins to wilt, add the remaining spinach.

Variation

Substitute 4 pkg. (10 oz. each) frozen spinach leaves, thawed and drained, for the fresh spinach. Cook mushrooms and garlic as directed. Add spinach; cook until heated through, stirring frequently. Continue as directed.

For one person I made only about 1/4 recipe using a bag of baby spinach leaves from the produce section which made this so easy. I sprinkled salt on the mushrooms and garlic while they cooked and added 1 Tbl water and 1 beef flavor liquid concentrate packet when the spinach was just done. Ate with Shake n Baked chicken and Stove Top stuffing so have to thank Kraft for a great meal last night.

It contains all the ingredients that my family love and I make it as an appetizer, main meal, snack, etc. You name it, it just not tastes wonderful, but the many ways I am utilize it is terrific and friends and family love it to especially the young ones that used to hold their mouths when they heard spinach.

I had purchased fresh spinach but my family was salad out - so I used this recipe as an alternative to use the mushrooms and spinach I had purchased. I did add a cup of chicken broth as the mushrooms soaked up all the oil and it added more flavor. My teenagers loved it.

I cooked up some steaks in a pan first then I made up this dish without washing the pan. The flavors of the steak seaped into this dish giving it a SAVORING taste!! Unfortuantely everyone took a nice helping and there were no seconds to enjoy. :(

I love both of these ingredients but not as combined in this recipe. I would not want to ruin either mushrooms or spinach again by using them in this recipe.
