  • Preheat oven to 400°F. Mix oil and garlic; spread onto cut surfaces of bread. Bake 8 to 10 minutes or until lightly browned. Cool.
  • Mix cream cheese and Parmesan cheese with electric mixer on medium speed until blended. Stir in olives.
  • Spread toasted bread halves with cream cheese mixture; top with tomatoes. Cut into 24 slices to serve. Sprinkle with basil.

Rated 5 out of 5 by from Yummy! Yummy! I seeded my tomatoes, so it didn't get soggy. I also used bagette bread cut in slices instead of French bread cut lengthwise. It made for crispier toasts. Great flavor. (I've used dried basil in a pinch and it works out fine - I just let the tomatoe mixture stand for a while to marry the flavors.)

The bruschetta was very good, however I found that more tomatos were needed, so I doubled the amount. I also added more parmesean to the cheese mixture to give it more flavour. Everyone raved about the taste, and before you knew it, I was back in the kitchen making more. I will definately make this again.

This is the best appetizer and it would also be perfect for a buffet style dinner party. Makes a great presentation and very festive. Tip: A great variation is to not use french bread and substitute with thin pre-sliced Italian bread.

Just grill the French bread instead of baking. It's a nice switch from the usual camping foods when added with a steak and some stuffed mushroom caps!

I put a little red onion, a clove of garlic, and a splash of olive oil in with the tomatoes to spice it up a bit! I will definitely make this recipe again!

This recipe is so good that requests for it are attached to party invitations I have received. I like the red and green colors at Christmas time. My kids ask for it and then take it out to share with their playmates.

Rated 5 out of 5 by from This is a new family favorite at our house! This is a new family favorite at our house! Although I omitted the olives, & added a few tablespoons of Italian dressing & chopped onion to the tomato mixture. It's delicious with or without the cream cheese spread.
