Use Your Microwave
To shorten the oven baking time, use your microwave for part of the recipe prep. Instead of slicing the potatoes, cut them into 1-inch cubes; place in 3-qt. microwaveable bowl. Add enough water to cover potatoes; cover with waxed paper. Microwave on HIGH 25 min. or just until potatoes are tender; drain. Meanwhile, cook onions as directed; stir in cooking creme, broth, 1 cup cheese and parsley. Spoon potatoes into 13x9-baking dish sprayed with cooking spray. Add cooking creme mixture; stir gently. Top with remaining cheese. Bake in 350ºF oven 15 min. or until cheese is melted. Let stand 5 min. before serving.
