Omit sandwich roll. Top each of 2 (6-inch) flour tortillas with half each of the cooked meat mixture and cheese. Fold in opposite sides of each tortilla, then roll up burrito style. Cook 2 to 3 min. on each side or until heated through.
Add a few roasted red peppers strips to the cooked meat mixture before adding to the sandwich roll.
Prepare using whatever leftover cooked meat you have on hand, such as beef sirloin steak, flank steak or London broil.
If you have a panini maker, you can use that to cook the sandwich instead of the skillet.
