We end up making almost 2 lbs worth of ham and slicing up the whole piece of ham into bites (mind you I have a fairly large family--11 kids and about 8 adults). We also use kosher quarters instead of chips, it gives a little bit more pickle with the amount of cream cheese spread.

Rated 5 out of 5 by from Instead of pickle slices, use a whole dill pickle. Instead of pickle slices, use a whole dill pickle. Dry the pickle thoroughly. Spread cream cheese on slice of ham and lay the whole pickle on it and roll up. Let chill for an hour or even overnight. When ready to serve, slice the ham roll into 1/4 inch slices. Looks pretty, too!
