Wow! We're moving and I had to find a recipe that called for foods that needed to get eaten. This was the perfect recipe! I did not have the cream cheese but added the parmesan while cooking, a little cooking wine, and a can of diced tomatoes. I made the sauce with one can of plain tomato sauce and two cans of tomato paste. Added my normal variety of Italian spices and it was super yummy. My picky eaters loved it! I will definitely make this recipe over and over again. It is nice to find a pork loin recipe that is made with a tomato-y sauce.
I had a 2 lb. boneless pork roast in the fridge that needed to be cooked on 1/23/13. I wasn’t sure what to do with it; I bought it because it was on sale (cheaper than 2 lbs. of hamburger). I was thrilled that I had all the ingredients I needed except for the Spanish-style tomato sauce (in its place, I used 1 can of tomato sauce, and pureed a can of diced tomatoes with green chilies, and added some pureed salsa to make up the 4 cups that was needed). My family and I raved about this dinner and went back for seconds; I know I’ll make this again and again!
