I had a 2 lb. boneless pork roast in the fridge that needed to be cooked on 1/23/13. I wasn’t sure what to do with it; I bought it because it was on sale (cheaper than 2 lbs. of hamburger). I was thrilled that I had all the ingredients I needed except for the Spanish-style tomato sauce (in its place, I used 1 can of tomato sauce, and pureed a can of diced tomatoes with green chilies, and added some pureed salsa to make up the 4 cups that was needed). My family and I raved about this dinner and went back for seconds; I know I’ll make this again and again!
