  • Heat oven to 350°F.
  • Mix first 6 ingredients in large bowl until well blended. Add spinach, peppers and onions; mix well.
  • Shape into 9x4-inch loaf in 13x9-inch pan sprayed with cooking spray.
  • Bake 45 min. Mix mustard and honey; brush onto meatloaf. Bake 25 to 35 min. or until done (165°F). Let stand 10 min. before slicing.

How to Drain Thawed Frozen Spinach

Squeeze portions of spinach with clean hands or place spinach in sieve and press out liquid with back of large spoon.

Special Extra

Prepare meatloaf as directed; cool, then slice. Wrap individual portions in foil. Label, date and place in freezer-weight resealable plastic bags. When ready to serve, unwrap and microwave until heated through (160°F).

I had some ground turkey and some frozen spinach on hand so I typed it in and this recipe came up. It was so good and I will definately make it again. The whole family loved it. I didn't have red peppers so those got left out and I didn't have any honey so I just used the mustard. I didn't pay attention to how much onion and put more than recipe calls for but it made it tasty. Definately a keeper.

Rated 5 out of 5 by from This meal was wonderful. This meal was wonderful. I do not eat red meat, so this made a wonderful alternative to the everyday baked chicken dinner. Instead of frozen spinach, I used fresh spinach leaves and chopped them real fine in my food processor. I enjoyed the fresh taste and it made the spinach not as difficult to drain. Also, I added a few handfuls of old-fashioned oats to help absorb excess moisture. My boyfriend loves this dinner. Delicious!

I had some picky eaters who would have prefered no red pepper but it was delicious to me because I love them. I cut off slices and place them on a pan seperately to toast them a little extra at the end since we like our meatloaf slightly browned and crispy. Also i mixed some extra honey mustard to drizzle over it when serving.

He ate almost half the "loaf" the first night and then ate the rest the next night. It was simple to make. I used fresh spinach rather than frozen and since i didnt have or want to buy the cereal i used bread crumbs as others suggested. It turned out simply delicious.

We both dipped it in a little ketchup- mostly out of habit but definitly tasty. Served with mashed potatoes and a side dish like corn! A good, low fat, but very yummy meal. Will be making this again for sure!!!

This is delicious -- I make it with 20oz of 93% lean ground turkey, 1/2 c oats(instead of farina), 1 whole egg(instead of egg product) and substitute 2 tsp ground mustard for grey poupon (rest of recipe is same) and it's STILL only 162 cal and 6 g fat per 1/8 loaf! YUMMY -- great way to get spinach into my kids!

Rated 5 out of 5 by from I loved this recipe! I loved this recipe! I recently moved out of state and away from family and meatloaf is my comfort food. I omitted the mustard and honey and simply used ketchup. It took a little longer to cook than the directions stated but turned out superb! My fiance loved it too and I plan on making it again very soon.

Rated 2 out of 5 by from I didn't really like the flavor of this meatloaf. I didn't really like the flavor of this meatloaf. It had too much of a spinach taste even though I like spinach. I had to put lots of catsup on it to eat it. Because of that, I'm going to crumble the leftovers over pasta and top with pasta sauce and parmesan cheese. I believe I will like it better then.
