  • Heat oven to 325°F.
  • Combine crumbs, 1/2 cup nuts, 3 Tbsp. sugar, 1/2 tsp. cinnamon and butter; press onto bottom of 9-inch springform pan. Bake 10 min.
  • Beat cream cheese, 1/2 cup sugar and vanilla in large bowl with mixer until blended. Add eggs, 1 at a time, mixing on low speed after each just until blended. Pour over crust.
  • Combine 1/3 cup sugar and remaining cinnamon. Sprinkle over apples in separate large bowl; mix lightly. Spoon over cream cheese layer; sprinkle with remaining nuts.
  • Bake 1 hour 10 min. to 1 hour 15 min or until center is almost set. Run knife around rim of pan to loosen cake; cool before removing rim. Refrigerate cheesecake 4 hours.

I added the juice and zest of 1/2 lemon and that gave the cheesecake a slight lemon flavor which my family loved. Also, I tossed the pecans with the apples, cinnamon and sugar - when the cheesecake was baked, the pecans were crunchy and sweet. One more step savor is to use cinnamon graham crackers for the crust - then you don't need to add the sugar and cinnamon. Overall very impressive and easy.

I ALSO MADE IT FOR A BAKE SALE AT MY CHURCH AND IT WAS SOLD BEFORE I EVEN SET IT DOWN. EVERYONE THAT HAS TRIED THIS CHEESECAKE LOVES IT. Sometimes it is good to try something different and step out into the water so to speak. the taste of the apples and the creamy taste of the cheesecake just hit the palet with excitment. This is a keeper!!

Also added a little more sugar and vanilla to the cheesecake. My husband (who doesn't care for desserts) loved it and thought it was something you would find at an upscale bakery.

I was a little worried as I did not have a chance to try out the recipe before hand. It was wonderful, done perfectly and looked just like the picture! Now I will experiment using sugar substitute products.

Rated 2 out of 5 by from My cheesecake didn't cook under the apples. My cheesecake didn't cook under the apples. It was all mushy and tasted horrible. However, the apples smelled and tasted delicious, so eveyone ate them off the top. In the future i'll just bake the apples without the cheesecake underneath. it's much healthier that way too.

I'm a fairly experienced cook, but not a baker, and even I have no trouble getting this just right every time. It's a little bit of work with peeling and slicing the apples, but so worth it!

Rated 5 out of 5 by from Totally Delish! Totally Delish! It looked just like the picture when done. Cook time was right on. Prep time was a little longer due to peeling the apples and slicing them up. I used brown sugar in the crust mix and in the topping mix. I will make this again for sure!
