  • Cook bacon in 7-qt. stockpot. Use slotted spoon to remove bacon from pan, reserving 1 tsp. drippings in pan. Drain bacon on paper towels. Add Red Sofrito and onions to pan; cook 3 min., stirring frequently. Stir in next 5 ingredients; bring to boil. Simmer on low heat 10 min.
  • Add mussels; cover. Cook 2 min. Add red snapper; cook, covered, 2 min. Add shrimp; cook, covered, 4 min. or until shrimp turn pink. Discard any unopened mussels.
  • Top stew with bacon.

Timing Seafood

The seafood and fish are added to the stew at different times due to the different cooking time needed for each. Overcooked seafood can result in a failed recipe.

How to Clean Mussels

Rinse mussels under cold running water, pulling or scraping off the beards, also known as byssal threads, that are attached at the bottoms of the shells.
