What You Need

slices  OSCAR MAYER Bacon, chopped

small  onion, sliced

qt.  (4 cups) chicken broth
1
can   (14.5 oz.) diced tomatoes, undrained
1
cup   canned unsweetened coconut milk
1/2
cup  fresh cilantro
1
 serrano chile
1-1/2
lb.   fresh mussels (about 50), cleaned, scrubbed with beards removed
1
lb.   skinless red snapper fillets, cut into 8 pieces
1
lb.   uncooked deveined peeled medium shrimp

Make It

COOK bacon in 7-qt. stockpot. Use slotted spoon to remove bacon from pan, reserving 1 tsp. drippings in pan. Drain bacon on paper towels. Add Red Sofrito and onions to pan; cook 3 min., stirring frequently. Stir in next 5 ingredients; bring to boil. Simmer on low heat 10 min.

ADD mussels; cover. Cook 2 min. Add red snapper; cook, covered, 2 min. Add shrimp; cook, covered, 4 min. or until shrimp turn pink. Discard any unopened mussels.

TOP stew with bacon.
