  • Heat grill to medium-high heat.
  • Combine all ingredients except cheese. Spoon onto center of large sheet heavy-duty foil; fold to make packet.
  • Grill 8 to 10 min. or until peppers and zucchini are crisp-tender, turning after 4 min.
  • Cut slits in foil to release steam before carefully opening packet. Top vegetable mixture with cheese.

Special Extra

Toss vegetables and tomatoes with 1 Tbsp. CLASSICO Basil Pesto Pasta Sauce along with the dressing. Or, sprinkle cooked vegetable mixture with chopped fresh parsley just before serving.

Substitute

If you don't have heavy-duty foil, you can use a double layer of regular foil instead.

I like to use Sweet Bell Peppers, Onions, Mushrooms, Garlic Cloves, Celery and Zucchini, sometimes adding Cherry Tomatoes. I prefer to bake a whole bunch in my 9" x 13" baking pan, wrap with foil and bake to desired crispness. Sometimes I sprinkle with Parmesan cheese before serving too! You are only limited by your taste buds. Delicious and healthy way to enjoy your veggies!!! enJOY!!!

I have used Italian, Red Wine Vinegrette (our fav), sun dried tomato and balsamic vinegrette - basically all of the oil based Kraft dressings. I use every variation of veggies too. We like it best with a combo of zuchinni, yellow and green squash, with the colored bellpeppers and mushrooms. We also add valdai onions to jazz it up. It goes great with pork chops, tenderloin and anything chicken!

Rated 5 out of 5 by from This recipe is really really tasty! This recipe is really really tasty!!! I have made this dish for my husband, and my in-laws! Everyone was extremely impressed. I also added squash to this mixture as well as some Italian herb seasoning and some extra parmesan. I also marinated the vegetables in Sun Dried Tomato dressing. It really gave the recipe some punch! Not only is this recipe tasty, its also EXTREMELY healhty! I love this! I will make this again soon!

Rated 5 out of 5 by from Totally satisfying! Totally satisfying! I highly recommend this recipe and the variation of veggies are endless! The leftovers didn't last long and tasted just as good the first time around. The last bit of veggies we had - we double wrapped in foil, added a bit more spices and put back on the grill on a low flame area and it worked just as well as a side dish as the first time around.

But, it doesn't help that the recipe is made using a grill when you don't have one!! I agree with 1 cook from 07/20/10; the recipe should include an alternative cooking method for those of us who don't have a grill!

I have used different vegetables each time and it is still just as tasty. Full of flavor. I loved to grill in the summer and this was an excellent. I will keep on making this one.
