This is such a great summer recipe - I cut the recipe in half for 2 portions and I was able to cook it in my toaster oven - bonus for keeping the kitchen cool. I'm not a big salmon fan but Husband loves it, so I made it anyway and I didn't mind it at all.
The sugar snap peas were in bad shape at the store, so I used snow peas instead.
