I left off the broccoli. It is easy to fix.
The vegetables turn out tender crisp. It is very colorful on the platter. I would serve it to company.
I used garlic and herb flavored shake n bake which I like and my kids usually like broccoli but didn't like it in this recipe. I seasoned the vegetables before I put the chicken on top, what I should have done and what I would recommend to anyone else making this recipe is to coat the vegetables in olive oil first and then season them with salt and pepper then proceed as recipe directs. The shake n bake didn't stick to my veg so I was left with a lot of crumbs on my plate. But my chicken was cooked perfectly. It was just a very disappointing recipe.
