  • Place shrimp in large glass or plastic bowl. Pour combined lime juice and dressing over shrimp. Add red pepper, celery and cilantro; mix lightly. Cover. Refrigerate several hours to marinate.
  • Drain shrimp mixture; discard marinade. Spoon 1 tsp. of the shrimp mixture onto each tortilla chip. Serve immediately.

Make Ahead

Ceviche mixture can be prepared in advance. Cover and store in refrigerator up to 3 days. When ready to serve, drain and place on tortilla chips as directed.

Rated 5 out of 5 by from The shrimp ceviche was delicious. The shrimp ceviche was delicious. It is easy make and I added 2 ingredients to the recipe which were two cans of V8 tomato juice and 1-2 diced cucumbers. A few hours after the shrimp was marinated with the lemon (or) limes, I had added the tomato juice and the diced cucumber(s). My family enjoyed it. This is a great recipe to enjoy for an appetite. I will be making this again soon.

Rated 4 out of 5 by from I was surprised as to how well the dressing and celery went with the ceviche. I was surprised as to how well the dressing and celery went with the ceviche. I have eaten the traditional ceviche before which do not call for these ingredients. I cut the shrimp into thirds and replaced the red pepper with a roma tomato, added shallots, salt and pepper to taste. I also used tostadas instead of tortilla chips.

I usually try to find quick and easy ones, and that are easily transported. They went "wild" over this one, and have requested that I make it again. Fabulous! Thank you Kraft kitchens. I don't have to ask anymore what to bring its always requested. I have found if I make the night before all the flavors blend better and I drain the marinade about 1/2hour before I'm ready to leave. ITS THE BEST!!!!!!!!!!!!!!

I kept adding spices etc. Shrimp sauce helped as did pepper and Mrs Dash. The longer it marinated it was better but you really need to play with this recipe it doesnt cut it the way it is

The first time I made this recipe I served it a few hours after I made and even though it was good, you could tell that it needed to sit and "fester" a bit longer. Ever since, I make it the day before and it is great. It's great recipe and it is so yummy, everybody loves it.

I did add more dressing than called for as well as a little salt and pepper. Let it chill overnight and it will taste much better. Overall it was a winner.
