  • Cook pasta as directed on package, omitting salt.
  • Meanwhile, melt 2 Tbsp. butter in large skillet on medium-high heat. Add shrimp; cook and stir 3 min. or until shrimp turn pink. Remove shrimp from skillet; cover to keep warm.
  • Add remaining ingredients, including remaining butter, to skillet; cook on low heat 5 min. or until cream cheese is completely melted and mixture is well blended, stirring constantly with whisk. Stir in shrimp.
  • Drain pasta; place in large bowl. Add shrimp mixture; mix lightly.

Serving Suggestion

Serve this flavorful main dish along with a mixed green salad for a tasty weekday meal.

Note

For a stronger or milder flavor, use more or less chipotle peppers to taste.

I didn't have chipotle peppers in adobo sauce but I did find chipotle flavoured Philidelphia cream cheese so I just substituted cream cheese and added a little extra for good measure. It was still nice and spicy with a bit of a bite. Probably would be spicier the original way but the results were good and safe for the pallat.

Rated 5 out of 5 by from So good! So good! I didn't have ***** cheese,don't really care for it so used jarred Alfredo and let it reduce a bit. Normally we put a ton of cayanne pepper in our Alfredo dishes,we love spice,but this was a much better flavor with the chipotles. YUM!! It was super tasty with shrimp. Next time I'll try it with grilled chicken breast.

Rated 5 out of 5 by from LOVED this pasta! LOVED this pasta!! I made it for my extended family & doubled the sauce. I made with 1/3 fat cream cheese & 2% milk.... Turned out great!! I used pre-cooked cilantro shrimp from costco which complimented the sauce perfectly. Would recommend!!! Just remember to constantly stir the sauce.

Rated 5 out of 5 by from Oh my! Oh my!!! I think this is so good!! I added some garlic to the sauce, with craked pepper and sea salt. Sauteed the shrimp with some mrs dash SW chipotle and used whole wheat bowtie pasta. I think this gives the chain restaurants a run for their $$$

Rated 5 out of 5 by from This recipe was a big hit at my house. This recipe was a big hit at my house. I only put about a 1/2 T of Chipotle to keep my youngest happy. We topped ours off with a chipotle rub after cooking, and it was fantastic. One of my top 10 faves now. Quick and very easy to make.

Rated 5 out of 5 by from Very easy recipe and extremely good! Very easy recipe and extremely good! I sauteed some garlic with while cooking the shrimp. I didn't have any chipotle peppers on hand, so I added chipotle seasoning to the milk and it worked out very well.
