  • Mix guacamole, dressing and lime juice until blended. Refrigerate until ready to use.
  • Heat oil in large skillet on medium heat. Add onions and peppers; cook 4 to 5 min. or until crisp-tender, stirring occasionally. Add shrimp; cook 2 to 3 min. or until shrimp turn pink, stirring frequently.
  • Spoon shrimp mixture onto tortillas; top with cheese and guacamole mixture. Roll up.

Variation

Substitute 1 lb. boneless skinless chicken breasts or sirloin steak, cut into thin strips, for the shrimp. Prepare recipe as directed, adding the meat to the skillet along with the peppers and onions, and increasing the meat cooking time to 5 to 7 min. or until done.
