Shrimp & Jack Quesadilla

Shrimp & Jack Quesadilla recipe

Shrimp, pepper jack cheese and fresh avocado slices make for one of the tastier quesadillas you've had in a while! Serves two, so you can share the yum.

What You Need

tsp.  oil
lb.  uncooked medium shrimp, peeled, deveined
tsp.  ground red pepper (cayenne)
 flour tortillas (8 inch)
 KRAFT Big Slice Pepper Jack Cheese Slices
cup  fresh salsa
 avocado, sliced

Make It

HEAT panini grill.

HEAT oil in small skillet on medium heat. Add shrimp and red pepper; cook and stir 3 to 4 min. or until shrimp turn pink.

TOP 1 tortilla with 1 cheese slice, shrimp, salsa and avocados; cover with remaining cheese slice and tortilla.

GRILL 4 min. or until golden brown. Cut into wedges.

Serve with a mixed green salad and your favorite fresh fruit to round out the meal.
If You Don't Have a Panini Grill
Heat skillet on medium heat. Cook quesadilla 3 min. on each side or until cheese is melted and quesadilla is golden brown on both sides, gently pressing down top of quesadilla with spatula to flatten slightly as it cooks.
How to Devein Raw Shrimp
To devein raw shrimp, first remove the outer shell. Then make a lengthwise shallow cut on the outer curve of the shrimp to expose the black vein. Loosen the vein with the tip of a sharp knife, then pull with your fingers to remove.
