  • Heat panini grill.
  • Heat oil in small skillet on medium heat. Add shrimp and red pepper; cook and stir 3 to 4 min. or until shrimp turn pink.
  • Top 1 tortilla with 1/4 cup cheese, shrimp, salsa and avocados; cover with remaining cheese and tortilla.
  • Grill 4 min. or until golden brown. Cut into wedges.

Serving Suggestion

Serve with a mixed green salad and your favorite fresh fruit to round out the meal.

If You Don't Have a Panini Grill

Heat skillet on medium heat. Cook quesadilla 3 min. on each side or until cheese is melted and quesadilla is golden brown on both sides, gently pressing down top of quesadilla with spatula to flatten slightly as it cooks.

Substitute

Prepare using two slices KRAFT Big Slice Pepper Jack Cheese.

    I made these shrimp and jack quesadillas for dinner. They were delish the only things omitted were the avocados cause I dont like them and the salsa inside but I did put sauteed onions and bell peppers and dipped in salsa. Yum!
