  • Cook and stir onion in hot oil in large skillet on medium heat 3 min. Add tomatoes, wine and oregano; mix well. Reduce heat to low; cook 5 min. or until thickened, stirring occasionally.
  • Add shrimp. Cook 3 min. or until shrimp are pink, stirring frequently.
  • Sprinkle with cheese; cook 1 min. Stir in parsley. Serve over rice.

On a night that I wasn't interested in going out to get ingredients from the grocery store, I found this one while searching for shrimp recipes (have frozen in stock most of the time for a quick protein on nights like this)...was awesome - made with chopped fresh vine ripened tomatoes, a bit of pasta sauce, peppers, onion and garlic. Served on top of bulgar. Very delicious!

I made a few changes to this recipe; instead of onions, I used fresh garlic and I added a can of tomato paste for thickening purposes. I served it with Fettucine and sprinkled the Feta on top of each individual plate. I would rate this recipe 5 stars - it would be delicious with ground beef or chicken, as well as shrimp.

This meal was great, next time i think i wll add in some red pepper flakes, but other that it was great. I also added some black olives to the dish and used a red pepper instead of onion, it gave the dish a nice sweetness
