  • Mix all of the ingredients for the glaze together well and set to the side.
  • Preheat oven to 325°F.
  • Mix together apples, vanilla and cinnamon in a small bowl.
  • Sift the flour, salt, baking soda together in a separate bowl.
  • Beat the sugar, oil and eggs together in another bowl.
  • Add the dry ingredients into the egg mixture a little at a time and slowly.
  • Fold the apples into the batter.
  • Grease a loaf pan and add the batter.
  • Bake for about 1 hour and 30 minutes or until a toothpick inserted comes out clean.
  • Allow the cake to cool completely then remove from pan.
  • Drizzle the glaze over the top.
